Grilled Globe Squash

"Saw local globe squash at Whole Foods® and wanted to try it. Turns out it's perfect for the grill since it's so thick and easy to pick up."

Ingredients :

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons white vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 4 baseball-size globe squash, cut into 1/2-inch thick slices

Instructions :

Prep : 10M Cook : 4M Ready in : 30M
  • Mix olive oil, vinegar, salt, and black pepper in a large bowl; add squash and toss to coat. Marinate for 10 minutes.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Arrange squash slices on the preheated grill and cook until tender and lightly browned, about 3 minutes per side.

Notes :

  • I cooked it before I did the meat, then kept it warm on a cooler part of the grill.
